The high-end menu will celebrate the unique flavours of Los Cabos, showcasing the vibrant flavours and abundant ingredients of the Baja California Sur, such as its’ incredible seafood, tropical fruits and indigenous herbs.
At its core, sustainability is a fundamental aspect of the upcoming concept as the restaurant will focus on sourcing seasonal ingredients from local producers and sustainable fisheries in Baja California Sur.

The dining concept Céfiro is inspired by Chef Gaytán’s deep-rooted connection to his Mexican heritage, particularly his hometown of Guerrero, combined with his international culinary journey.
Chef Gaytán’s path from Guerrero to becoming the first Mexican chef awarded a Michelin star in the United States—and later earning another in Mexico in 2024—deeply influences this project.
His rare achievement of Michelin recognition in two countries underscores his commitment to honouring Mexican cuisine while redefining its possibilities.
The culinary concept at The St. Regis Los Cabos will be Chef Gaytán’s debut in the Baja California Sur, introducing Michelin-level expertise to the region and will mark his first collaboration with the St. Regis brand.
